Recipe for Salmon Patties
If you are looking for something quick and easy to make that is both economical and nutritious you might enjoy salmon patties.
Since my husband was recently diagnosed with diabetes we take extra precautions to add whole grains to our diet instead of simply processed white bread, so I substitute two handfuls of crushed wheat thins for the bread crumbs.
Cut onions without tears.
I used to hate cutting onions. They caused me to tear up and get a runny nose until I found this new method. First cut off both ends of your onion. Pierce it several times with a tooth pick and place it on a paper towel in your microwave. Cook on high for 60 seconds. Set it aside to cool while you mix up the rest of your ingredients.
Mix 1 can of salmon less about two tablespoons of the liquid. My cats love it drizzled over their food. You should have left about 1/4 cup of liquid in your salmon. Add two heaping spoons of powdered milk, your cracker crumbs, a dash or two of fresh pepper and one egg. Blend thoroughly. Dice your onion and blend it in also.
The milk not only helps to remove some of the fishiness of the salmon, but it also will add calcium and Vitamin D to your meal.
Cook in canola oil or olive oil at 350. Drop spoon fulls in hot grease, or form patties with your hand and place in pan gently so as not to get splattered by hot grease. Flatten patties slightly with spatula. Cook until both sides are desired shade of brown.
Whenever I fry food, I always place it on a paper towel to absorb excess grease, but now that we know more about cooking oils we choose heart healthy oils such as canola or olive.
This makes a dozen patties.

I haven't made salmon patties in a really long time, thanks for the reminder. My recipe is similar to yours but doesn't include the powdered milk, I will give it a try.

I think my family would love to have this recipe. They really like fish. Diabetes runs in my family on my father's side so they could definitely use some healthy meals.

Judy, I found that by adding powdered milk I lessened the fishy taste, plus calcium helps our bones and lowers blood pressure.
