Bran Muffins with Figs n Flax
Flax gives a great nutty taste (plus many added health benefits) and the figs add a sweetness and extra fiber.

Total Time: 40 minutes
Servings: 16 – 18 muffins (depending on size)
2 ¼ cups self-rising flour
1/2 cup brown sugar
1 cup raisin bran cereal
1 1/3 cups skimmed milk
1/2 cup canola oil or apple sauce
1/4 cup finely chopped figs
1/4 cup ground flax seed, pumpkin seeds, or chopped nuts of your choice
1. Stir together flour, sugar. Set aside.2. In large mixing bowl, combine cereal and milk. Let stand about 2 minutes or until cereal softens. Add eggs and oil or apple sauce. Beat well. Stir in figs and flax. Add flour mixture, stirring only until combined. Spoon into muffin cups. Bake at 350° F about 20 minutes or until wooden toothpick inserted near center comes out clean. Serve with butter or plain.
