Creamy Vegetable Beef Soup

Homemade creamy vegetable beef soup

Why is it when I catch a cold, which isn’t often, I lose my voice?

My throat gets raw and sore, and since I work in a call center, my voice is important so I try to protect it. We all get busy and caught up with life from time to time and forget to take care of ourselves. Then illness causes us to stop and nurse ourselves back to health.
I researched sore throat remedies and wrote an article some time ago and am using some of those tips now, but along with the herbs and teas I was craving some hot soup. Soup is such a nice comfort food on a cold day but when you already don’t feel good who wants to stand in a kitchen all day preparing something; but at the same time canned soup? Have you read the sodium content and it just doesn’t taste the same! I don’t care what their commercials say. :-)
I diced one large baking potato (much bigger than the one shown), added a cup of frozen stir fry vegetables, you know the one with sweet red peppers, broccoli, green beans, carrots, pea pods and onions and 1/2 cup of water and microwaved in a large glass bowl for 15 minutes. I then stirred in a can of Hormel roast beef with gravy and one can of cream of celery soup and cooked for 5 more minutes first adding in a can of water to clean out the remainder of the soup in the can. Scrape out the beef gravy and place it into the bowl too.

It makes four large bowls of thick and creamy soup, which will stick to your ribs and satisfy your hunger. You could always add more beef if you are a meat lover, or add more potatoes or veggies. You could use chicken instead or even skip the meat, if you are a vegan. Potatoes are loaded with potassium and will help lower your blood pressure, which we know many cold medications cause to raise. Celery is very good to help lower blood pressure too. Thank you for your visit. I hope you take time to care for yourself and have a blessed day.

I love to have soup in the winter, and for me, chicken soup is the best for when I have a cold..

Mumsy, chicken soup is great for a cold and I am sure it could work instead of the beef.

Hugs!
