Easy Quiche

 These lovely photos were taken by my co-worker. It's a reflection of her creativity which she has on display on her bathroom wall in her master bedroom. When she told me her bathroom was painted orange I requested photos!! Aren't they lovely?


Quiche cupcakes

This is an easy meal with little prep needed or clean up and eggs are a wonderful addition to our diet. They are the one food which is a perfect protein! We enjoy quiche. I hope you do too!

Makes one 10 oz pie or a dozen cupcakes. Preheat oven to 375 F

2 cups of milk
4 eggs
3/4 cups biscuit mix
1/4 softened butter or oleo
1 cup grated Parmesan cheese
1 10 oz thawed drained package of spinach
1 cup cubed leftover meat
1 8 oz. shredded cheddar cheese or the cheese of your choice 

Lightly grease pie tin or muffin tin. 

In large mixing bowl mix thoroughly milk, eggs, baking mix, butter and Parmesan cheese. Stir in cubed meat, spinach and shredded cheese. Pour into pan and bake for about 50 minutes. Top will be golden brown. Serve hot.
